While Eric did not grow up around BBQ, outdoor cooking wasn't a rare occasion in his childhood and he carries fond memories of his father "bbq-ing" on the Weber kettle in the backyard. His initial introduction to actual smoked meats and BBQ was in 2006, when he attended a BBQ Competition in Frisco, Colorado. This was an eye-opening experience for him. Then, in 2008, Eric moved to Houston, Texas which greatly expanded his access to classic Texas BBQ and his curiosity and enthusiasm for BBQ fluorished. In 2012, Eric moved to NYC to pursue his career in wine and ultimately became the corporate Beverage Director for Jean-Georges, a 3-star Michelin restaurant at the time as well as more than 30 other locations around the globe. While NYC may not be famous for BBQ, there were still opportunities for Eric to stay connected to the cuisine with a major BBQ festival in Bryant Park as well as some well-known BBQ restaurants in the city and surrounding boroughs.
After reaching the apex of the hospitality industry, Eric pivoted to working with a couple wine importers and returned to Texas in 2018 to raise his family. Since he left Houston, the BBQ scene continued to grow and there were more and more opportunities to check out different BBQ restaurants and speak with the pitmasters. In 2020, one week before COVID-19 shut down the country, Eric and his family moved to Austin. With the lockdown of Austin, and furloughed awaiting to open a boutique hotel as the Food & Beverage Director, Eric started experimenting with smoking meat in the parking lot of his apartment complex with a Weber kettle grill armed with information gleaned from other pitmasters and hours of watching videos on YouTube.
Shortly thereafter, Eric and his family moved into their house in Buda, TX and his first purchase was an offset smoker. Now, the fire was lit. After a couple years of smoking meats as often as he could, Eric upgraded his smoker to a larger offset that also had a second shelf. This really afforded Eric the opportunity to cook several meats at a time. Weekly smoking sessions continued as often as possible and he really began to build his consistency with producing delicious BBQ. Large family and friend gatherings afforded Eric the chance to cook multiple meats and greater quantities. Ultimately, unbeknownst to any of the friends and family at a gathering in the spring of 2025, Eric used this opportunity as a litmus test to see if he really could put out quantities of food at a quality high enough to pursue opening the food truck. Turned out, he could, so he began scouring Facebook Marketplace for equipment to launch Fiasco BBQ.
After months of searching for, and procuring, a smoker trailer, a food trailer, and all the equipment he needed, and passing an inspection with the City of Austin, Fiasco BBQ opened on July 12, 2025 at 641 Allen St. in Austin, TX.
